PINA COLADA NICE CREAM

A creamy tropical, refreshing ice cream inspired by the drink pina colada. This delicious fruity treat makes a great family-friendly dessert or snack. Completely without sugar and dairy products and where the creaminess comes from frozen bananas.

Ingredients
 
 

  • 2 Bananas sliced and frozen (about 300 g)
  • 250 g Pineapple frozen in cubes
  • 2 dl Coconut milk
  • 1 Lime juiced

Instructions
 

  • Mix all ingredients in a blender or food processor to the desired consistency. If your blender is having a hard time blending the bananas, add more coconut milk by the tablespoon.
  • Top with shredded coconut and enjoy!
  • Store the ice cream covered in plastic-wrap in an air-tight container in the freezer. Thaw for around 30 minutes before scooping and serving.
